Birthday Cupcakes

Hey Guys!!

As you can see from the above picture I turned into a bit of a baking machine last week, baking in total 48 cupcakes!! Yes, 48!! I made 12 of each different flavour which was Chocolate, Vanilla, Red Velvet and Carrot Cake. Luckily I had some helping hands from Llewellyn to get them all done.



First up I made the Chocolate and Vanilla cupcakes.

Vanilla Cupcakes
90ml Vegetable Oil (6 tbsp)
180ml Water
3 Medium Eggs

Chocolate Cupcakes
125ml Vegetable Oil (8 tbsp + 1 tsp)
230ml Water
3 Medium Eggs



Then I made the Red Velvet and Carrot cupcakes.

Red Velvet Cupcakes
105ml Vegetable Oil (7 tbsp)
200ml Water
3 Medium Eggs

Carrot Cupcakes
105ml Vegetable Oil (7 tbsp)
200ml Water
3 Medium Eggs

The oven was pre-heated to Gas Mark 4 and took 30-40 minutes to bake.



Once they had then all cooled down I iced them with Chocolate Icing and then Llewellyn put the buttons on.


These looked so good and everyone enjoyed them at Chloes' party. The kitchen while baking them smelt absolutely amazing!!

Jammie Dodger Cupcakes

Hey Guys!!

As I had a week off work I thought I would take advantage of that and actually done some baking. I love baking and can't get enough of it but I really don't bake enough, I would like to change that.

This week I decided to do cupcakes but do them a little differently instead of doing my usual cupcakes with icing on top. I actually seen this recipe on another blog called Forever Baking and wanted to make my own. I did mine a little differently though as I done Red Velvet instead of Vanilla, you would never guess that I love Red Velvet.

So the ingredients you need are:

105ml Vegetable Oil
200ml Water
3 Eggs
Betty Crocker Red Velvet Mix


I put all of these ingredients in to a mixing bowl, as you do, and mixed it altogether.


While they baked I got everything ready to decorate the cakes. I used 175g Icing Sugar, 75g Butter, 3 tbsp Water, a few drops of Vanilla Essence, Strawberry Jam and Mini Jammie Dodgers.


The cupcakes took 20 minutes to bake at Gas Mark 4 and while they cooled I got the buttercream icing ready.


Once they had cooled I used a knife to cut little circles in the cakes so that I could add Jam to the middle, then added the icing.




Then for the finishing touch of the cupcakes I added a Mini Jammie Dodger to the top of each cake.


They turned out so well and so far all my family have really liked them and said they are delicious. I would make these again in a heart beat and I think they would be perfect for Valentines Day or a birthday party.

Hey Guys!!

I love baking and I haven't baked in a very long time now, so as you can see from the photo above that's what I decided to do last week.

I found these little cupcakes on Pinterest and wanted to try and do them myself. You can find the original post HERE and this is the recipe I followed HERE.

So let me show you how I did them.


So first I measured all the powder ingredients as you can see, which were:

100g Plain Flour
140g Caster Sugar
20g Cocoa Powder
1 1/2tsp Baking Soda

I then weighed out the butter which was 40g and added the egg. I then added the liquids to the mix which was:

1tbsp Vanilla Extract
120ml Whole Milk

I also had to add in a pinch of salt and then mixed it altogether in my trusty mixer.


I spooned 1 small spoon of mixture into each cupcake case and baked them at 170 degrees for 20-25 mins.



Once they had cooled down it was time to decorate them with Buttercream Icing. To make the icing I needed:

280g Icing Sugar
140g Butter
1-2tbsp Milk



I then put a 'blob' of icing on 12 cupcakes and then dipped them all in Granulated Sugar, so they appeared white.


Then it was time to do their little faces, I used:

Plain Chocolate Chips
Chocolate Strands/Hundreds & Thousands
White Icing Pen
Chocolate Icing Pen

The most fiddliest part was doing the mouth as I had to pick out individual strands, I should've used tweezers it might have been easier.


And that's it, it was pretty simple to follow and I really enjoyed making these. I think they look so adorable, more than one is rather sickly though!!

Chick Devil's Food Cupcakes

Hey Guys!!

Again I had the baking bug and decided to make some cupcakes. These cupcakes I hadn't made before either and also it was the first time I have properly decorated cupcakes as you'll see.

All you need is:
Devil's Food Cupcakes Mix
30ml Vegetable Oil (2 tbsp)
60ml Water (4 tbsp)
2 medium Free Range Eggs





I put all the ingredients into my mixer and mixed it altogether for about 2-3 minutes on number 2.


Until it was a lovely and smooth mixture.



I then spooned them into the their cases and baked them in the centre of the oven at 160 degrees for 16 minutes.


To decorate them I used ready to roll yellow icing, caramel and chocolate writing pens and the icing provided.




Once they had cooled overnight I then mixed together the powder, 60g of soft butter and 10ml (2 tsp) of water. I must say the icing smelt gorgeous!!


I iced all the cakes with the chocolate icing, then rolled out the yellow icing, cut out 9 circles and 18 tear drop shapes. Then as you can see used the chocolate writing pen for the eyes and the caramel on for its beak and feet.

I did actually make these for Easter and they were delicious. I thought they came out really well as I've never really decorated cupcakes like this before.

Lemon Cupcakes

Hey Guys!!

Lately I have been loving baking so much and have been baking something new every week. I have been cheating though as I have been using a mix, rather than baking from scratch. Between work, blogging and Youtube I haven't had time to bake from scratch, but it's calming down so will have plenty of time.

This time I decided to make some Lemon Cupcakes as I had not used this mix before and I've not tried Lemon Cupcakes either.

All you need is:
Sunny Lemon Cupcakes Mix
30ml of Vegetable Oil (2 tbsp)
60ml of Water (4 tbsp)
2 medium Free Range Eggs


I put all the ingredients into my mixer and mixed it on number 2 for 2-3 minutes.


Until it looked like this.


I then spooned the mixture into 9 cupcake cases and baked them for 16 minutes at 160 degrees as I have a fan assisted oven. As you can see from above there they are before and after.


Once they had cooled down I then mixed together the Icing mixture with 60g of soft butter, I use Stork butter, and 10ml (2 tsp) of water to make the icing.


I then iced all the cakes with a butter knife and sprinkled them with rainbow sprinkles to add some colour rather than the sprinkles provided.


I must say these cakes were delicious and you could definitely taste the Lemon in them. It wasn't to Lemon-y which was nice as I think it would be to 'sour' otherwise, they were also very soft and chewy which I like in a cupcake.

Red Velvet Cupcakes ox

Hey Guys!!

Last Friday I decided I wanted to do some baking as I am starting to feel stir crazy and really need a hobby of some kind. Baking, to be honest, is the only thing that I really enjoy doing in my spare time, other than reading of course. 

Anyway lets begin!!


As you can see I used a Betty Crocker mix and all I needed was 3 eggs, water and vegetable oil. I then used Cream Cheese Icing, Maltesers and Chocolate sprinkles to decorate.


First I poured in the mix and 205ml of water.



I then added in the 65ml of Vegetable Oil.


Next I then put in the 3 eggs.


I then mixed it in my mixer on number 1 for 3 minutes until it looked like the above.

I then put them in the oven, which I had preheated to 160 degrees, and left them in for 30 minutes. I then waited for them to cool down and decorated them.



It was so fun making cupcakes like this as usually I only make them and I don't decorate them as I am usually only trying out a new recipe or something.
